The fermentation process involves 70% of the juice being aged in a mix of French and American oak, allowing for malolactic fermentation that imparts a rich, creamy texture with subtle oak spice notes.
The remaining 30% is fermented in stainless steel, preserving the wine's vibrant fruit flavors. Most of the Chardonnay is aged in previously-used or neutral oak, ensuring that the fresh fruit characteristics take center stage. Only 16% of the wine sees new oak, adding a gentle vanilla note to the overall profile.
