Tequila Ocho Plata is a vibrant expression of Blue Weber Agave, unaged and showcasing the unique characteristics of the Jalisco Highlands and the Camarena Ranchos. This tequila honors the terroir, delivering lively and clean flavors with a bold agave character, as envisioned by Carlos and Tomas.
Crafted with only three ingredients—agave, natural airborne yeast, and water—Tequila Ocho Plata is produced through a slow, artisanal process. Overripe agaves are hand-harvested from the Golden Triangle of Los Altos de Jalisco, then slow-cooked in brick ovens for 48 hours before cooling for another 24 hours. The agaves are crushed using a roller mill, fermented with natural airborne yeast, and double-pot distilled at low temperatures, first in stainless steel with copper components and then in full copper pots.
On the nose, expect crisp, bright agave notes complemented by lively citrus, fresh white pepper, and minerality. The palate reveals complex agave flavors, including fresh cut grass and a hint of earthiness, culminating in a thick, viscous mouthfeel and a long, harmonious finish.
